1 lb GROUND TURKEY
1/2 c soft bread crumbs
1/4 c tomato juice
1 Egg, beaten
2 Cloves garlic, minced
1/4 tsp dried oregano
1/4 tsp black pepper
1/4 lb SHAVED TURKEY HAM
1 c Mozzarella Cheese, grated
Vegetable cooking spray
Chili sauce, (optional)
In medium bowl combine turkey, bread crumbs, juice, egg, garlic, oregano and pepper.
On rectangular (12-X 16-inch) piece of wax paper, shape turkey mixture into 9-X 12-inch rectangle. Place turkey ham slices over top of turkey mixture and sprinkle cheese over turkey ham. Roll turkey, jellyroll- style, using wax paper to help roll. Lightly press ends of roll to seal. Place turkey roll seam-side-down on (13-X 9-X 1-inch) baking sheet, lightly coated with non-stick vegetable cooking spray.
Bake in 350 degree F. oven 1 hour or until center of turkey roll reaches 165 degrees F. on meat thermometer and is no longer pink.
To serve, drizzle 2 tablespoons chili sauce over top of roll, if desired, and cut into 12 equal pieces.
