1 Large cucumber, peeled, seeded and cut into 1/2-inch cubes
1/4 c sliced green onions
3 tbsp chopped fresh cilantro
1-1/2 tbsp white wine vinegar
1-1/2 tsp sugar
3/4 tsp salt
1/8 tsp red pepper flakes
6 ITALIAN TURKEY SAUSAGE LINKS
6 Buns (6-inches each), split lengthwise
In small bowl combine cucumber, onion, cilantro, vinegar, sugar, salt and pepper flakes. Cover and refrigerate several hours.
Preheat charcoal grill for direct-heat cooking. Grill sausages 4 to 5 minutes per side, until 165 degrees F is reached on meat thermometer and turkey is no longer pink in center.
To serve, place sausages in buns and top each with 1/4 cup salsa.
