1/2 lb TURKEY BREAKFAST SAUSAGE, cut into 3-1/2 X 1/4-inch patties or thinly sliced links
1 (8 oz) Package frozen egg substitute*, defrost according to package
1 tbsp green onions, thinly sliced
1 tbsp sweet red pepper, raw, chopped
1/4 tsp ground black pepper
Vegetable cooking spray
4 tsp reduced-fat Cheddar cheese, finely shredded
4 whole wheat English muffins, toasted
In medium nonstick skillet over medium heat, sauté patties or sliced links 3 minutes on each side until browned, but not cooked throughout.
In a small bowl combine egg substitute, green onion, red peppers and ground pepper. Pour egg mixture into 1-quart casserole, coated with nonstick vegetable cooking spray. Arrange partially cooked sausage over egg mixture. Cover with vented plastic wrap.
Microwave at MEDIUM (50% power) 5-1/2 to 6-1/2 minutes, turning dish 1/4 turn every minute or until egg mixture is almost set in center. Remove from oven. Evenly sprinkle cheese over sausage. Recover and allow to stand 5 minutes to set eggs.
To serve, cut sausage and egg mixture into 4 squares and place between muffins.
*TO MAKE EGG SUBSTITUTE: 1 cup egg substitute = 8 egg whites + 4 teaspoons monounsaturated or polyunsaturated oil
