2 tbsp margarine
1 c TURKEY HAM, cubed
3 c frozen hash brown potatoes
1/2 c green or red pepper, chopped
2 tbsp onion, chopped
1/4 tsp freshly ground black pepper
4 eggs
1/2 c Cheddar cheese, shredded
In a large skillet, over medium heat, melt margarine. Saute turkey ham, potatoes, green or red pepper, onion and black pepper until lightly browned.
Break eggs over potato mixture. Cover, cook until eggs are done.
Top with shredded Cheddar cheese and heat until melted.
