1 Package (32 oz) frozen hash brown potatoes
3/4 lb SMOKED TURKEY BREAST, cubed
1/2 c celery, chopped
1/2 c green onions, sliced
1/4 c green pepper, chopped
1/3 c reduced-calorie mayonnaise
1/3 c non-fat plain yogurt
2 tbsp Dijon-style mustard
To Taste freshly ground black pepper
1. In a large saucepan, over high heat, combine potatoes with 2 quarts boiling water. Boil 2 to 4 minutes or until potatoes are tender. Do not overcook. Drain thoroughly and cool to room temperature.
2. In a large bowl, combine smoked turkey, celery, onion, green pepper, mayonnaise, yogurt, mustard, pepper and pimentos with cooled potatoes.
3. Cover and refrigerate for at least 4 hours.
