Marinated red onions
3 tbsp white wine vinegar
1-1/2 tsp black pepper, freshly ground
1/2 c olive oil
3 each red onions, sliced thin
24 slices pumpernickel or caraway bread
3/4 c + 1 tbsp Dijon-style mustard
3 lbs smoked turkey ham, thinly sliced
18 oz Muenster cheese, sliced
Combine vinegar, 1-tablespoon mustard, and black pepper in a mixing bowl.
Whisk in olive oil until smooth.
Add the onions and let stand 15-20 minutes.
Spread 12 slices of bread with Dijon mustard.
Top each slice of bread with 4 ounces of thinly sliced smoked turkey ham.
Top turkey ham with a 1-1/2 ounces of cheese.
Arrange marinated red onion mixture on top of turkey ham.
Top with the other slice of bread. Slice on the diagonal and serve.
