20 5-oz TURKEY STEAKS, (6-1/4 lbs total)
As Needed flour
1/2 c butter, clarified
1 c dry white wine
1/3 c fresh lemon juice
To Taste black pepper
3/4 c parsley, chopped
1/3 c butter, unsalted, cubed, & cold
Pound steaks out very thin, less than 1/4 inch. Lightly flour the steaks.
Heat clarified butter in a pan and saute steaks in batches until brown on both sides and fully cooked. Remove from pan, cover, and keep warm.
Add white wine to pan and deglaze.
Add lemon juice and black pepper and reduce heat slightly.
Remove from heat, add chopped parsley and butter, and wisk together.
Pour immediately over cooked turkey steaks.
