2 1/2 c nonfat plain yogurt
1/3 c Dijon-style mustard
3-1/3 tbsp curry powder
1-1/4 tsp salt
1-1/4 tsp course ground pepper
3-3/4 lbs SMOKED TURKEY BREAST, finely chopped
1-1/4 qt dried tart cherries
1-1/4 lbs carrots, shredded
2-1/2 c cucumber, seeded, finely chopped
1-1/4 c green onion, thinly sliced
20 Each whole wheat or plain flour pita wraps
Stir together yogurt, mustard, curry powder, salt, and pepper in a medium mixing bowl.
Gently stir in turkey, cherries, carrot, cucumber and green onion.
Mound about 3/4 cup turkey mixture just below center of each pita wrap.
Roll up the bottom, then fold in each side. Continue rolling forward until tightly wrapped.
Serve with fruit salad.
