1/2 c mayonnaise
1/3 c fresh lime juice
1/4 c chopped fresh cilantro
2 Cloves garlic, minced
1/2 tsp ground cumin
1/4 tsp salt
4 c COOKED TURKEY, roughly chopped
2 c seedless grapes, halved
1-1/2 c chopped English walnuts
1/2 c roasted red peppers or pimientos, drained and chopped
1/2 c finely chopped scallions
12 Pieces focaccia
Lettuce leaves, washed, dried and chilled As needed
DRESSING
Combine mayonnaise, lime juice, cilantro, garlic, cumin and salt. Cover and hold for service.
TURKEY SALAD
Combine turkey, grapes, walnuts, red peppers and scallions with half the dressing.
PLATING and SERVICE
Slice focaccia in half. Assemble each sandwich with lettuce leaves and 2/3 cup turkey salad. Serve remaining dressing as a condiment.
