1 c vegetable oil
3-1/4 lbs onions, chopped
6-1/4 lbs COOKED TURKEY, medium dice
3-1/4 c 30% less sodium taco seasoning mix
3-1/8 lbs canned black beans, drained and rinsed well
6-1/2 lbs frozen corn, thawed
6-1/4 lbs cooked rice
12-1/2 lbs mild salsa
50 10-inch tomato (or red) tortillas
3-1/8 lbs Cheddar cheese, shredded
6 Bunches fresh cilantro, washed, dried & chopped
Heat oil in a steam-jacketed kettle and saute onions and turkey in hot oil until onions are tender. Add taco seasoning and stir mixture.
Add drained black beans, corn, rice and 6 pounds salsa to turkey mixture. Slowly stir in the remaining salsa until the desired consistency is reached. Cook an additional 10 minutes, stirring frequently.
To fill and roll tortillas, measure 1 cup of turkey mixture and spoon onto each tortilla. Flatten with back of a spoon. Sprinkle with 1-ounce cheese and 1 teaspoon chopped cilantro. Fold opposite sides of tortilla towards center. Starting from the bottom, roll tortilla towards the top. Wrap the rolled tortilla in deli paper and diagonally cut tortilla in half. Place on serving tray.
One filled tortilla provides 3 ounces of meat/meat alternate, 3/4-cup vegetable and 3-1/4 servings of grains/breads.
