1/2 lb mixed salad greens or spring mix, washed, dried and chilled
12 oz SMOKED TURKEY, julienned
1 Large tomato, washed and julienned
1 Large red bell pepper, washed, seeded and julienned
3 Slices TURKEY BACON, cooked and crumbled
1 Medium red onion, peeled and julienned
1-1/2 tsp capers, drained
3 tbsp Gorgonzola, crumbled
As needed balsamic vinaigrette
Cover a 7-inch plate with chilled salad greens.
Layer the julienne strips as follows: smoked turkey in the center of the greens, tomatoes on each side of turkey, red pepper strips on each side of the tomatoes, a thin row of bacon bits and a final row of red onion strips to the edge of the plate.
Sprinkle with capers and Gorgonzola.
Add balsamic vinaigrette.
