1-1/2 c fresh basil leaves
2 tbsp English walnuts
1 tbsp olive oil
2 tbsp fresh lemon juice, divided
1/2 tsp lemon peel or zest, freshly grated
1 3-lb TURKEY BREAST, halved
To Taste salt and freshly ground pepper
For Garnish lemon slices and fresh basil leaves
Preheat oven to 350 degrees F.
Place basil, walnuts, olive oil, 1 tablespoon lemon juice and lemon peel in food processor or blender. Process until well blended.
Gently loosen skin from turkey. Spread basil mixture underneath skin. Pour remaining tablespoon lemon juice over turkey; sprinkle with salt and pepper.
Roast in baking pan, loosely covered with foil, basting occasionally for 35 minutes. Uncover and roast until browned, basting occasionally with pan juices, 40 to 60 minutes until the internal temperature reaches 165 degrees F.
Garnish with lemon slices and additional basil leaves.
