1 c onion, chopped
2 tbsp vegetable oil, divided
3 c long-grain white or brown rice, cooked (1 c uncooked)
1 c apple, pared, cored and chopped
1/4 c golden raisins
1/2 c apple or orange juice, divided
1 8-9 lb TURKEY BREAST
Salt and freshly ground pepper To Taste
Preheat oven to 350 degrees F.
Saute onion in 1 tablespoon oil until golden; stir in rice, apple, raisins, and 2 tablespoons fruit juice.
Sprinkle turkey with salt and pepper.
Stuff about 2 cups of rice mixture into neck flap; secure with metal skewer.
Line baking pan with foil and spoon remaining stuffing in a mound in the center of foil.
Place turkey, skin side up, over stuffing; crinkle foil up around stuffing.
Stir remaining 1 tablespoon oil with remaining fruit juice. Brush 2 tablespoons of juice mixture onto turkey.
Roast 2 hours until the internal temperature reaches 170 degrees F., basting every 15 minutes with juice mixture.
