90 oz canned chickpeas, drained
3 c canned black, pinto or kidney beans, drained and rinsed
3 c diced bell peppers
1-1/2 c chopped scallions
1-1/2 lbs SMOKED TURKEY, julienned
Dressing
8 oz olive oil
1/2 c seasoned rice vinegar
1/2 c orange juice
1/4 c soy sauce
1-1/2 tsp ginger powder
1 tsp white pepper
As needed curly lettuce leaves, washed and chilled
In a large bowl, blend chick peas, black beans, bell peppers and scallions.
Stir in turkey.
In blender or food processor, blend oil, rice vinegar, orange juice, soy sauce, ginger and pepper. Pour over salad and stir to combine. Serve or cover and refrigerate until serving.
To serve, line salad plates with lettuce leaves. Portion 1 cup salad over lettuce.
