1 lb TURKEY CUTLETS, cut into 1/4-inch strips
1 tbsp raspberry vinegar
1 tbsp oil, DIVIDED
1 tsp peeled and minced fresh ginger root
1 Large garlic clove, minced
1/2 tsp salt
1/4 tsp black pepper
1 Large pear, cored and cut into 1/4-inch strips
1 Large Rome Beauty or cooking apple, cored and cut into 1/4-inch strips
1 tbsp freshly squeezed lemon juice
1/2 c seedless red grapes
In a medium bowl, combine turkey, vinegar, 1 teaspoon oil, ginger, garlic, salt and pepper. Cover and refrigerate while preparing fruit.
In a second medium bowl, toss pear and apple slices with lemon juice.
In a large nonstick skillet or wok, heat 1 teaspoon oil over medium-high heat. Stir-fry pear and apples slices for 40-45 seconds. Remove fruit to a warm platter and keep warm.
Over medium-high heat, add remaining 1 teaspoon oil in pan and stir-fry turkey for 3 to 4 minutes or until turkey is no longer pink in center. Gently fold in cooked fruit slices and grapes. Heat until mixture is warm throughout. Serve immediately.
