1 tbsp chipotle chili in adobe, diced
6 oz TURKEY CUTLET or BREAST
To Taste salt and black pepper
1/2 Small red onion
1/2 Small red bell pepper, seeded
1 Each hoagie roll, lightly grilled
2 tbsp whole grain mustard
2 oz blue cheese, crumbled
4 oz turkey au jus, hot
Gently pound turkey cutlet to an even thickness. Rub diced chipotle evenly into the turkey breast. Season with salt and pepper.
Grill turkey, onion and pepper.
Remove the turkey from the grill, allow to rest for 3 minutes. Remove vegetables and slice onions and pepper. Slice turkey on the diagonal.
Brush lightly grilled roll with mustard. Place turkey in roll. Top with onion, peppers and cheese.
Serve warm so the cheese softens with the heated au jus.
