1-1/2 lbs dried ditalini or other small pasta shape, uncooked
1 lb TURKEY HAM, 1/4-inch dice
1 c Swiss cheese, 1/4-inch dice
6 Stalks celery, chopped
6 scallions, diced
1 c diced sweet onion
1/2 c diced black olives
1/2 c Dijon mustard
1/4 c vegetable oil
1/2 c white wine vinegar
To Taste kosher salt and freshly ground black pepper
Prepare dried pasta according to package directions. Drain, rinse with cold water and drain again.
Mix together cooked pasta, turkey ham, cheese, celery, scallions, onion and olives.
In a small bowl, mix mustard, oil, and vinegar together until combined.
Add to pasta and toss well. Season with salt and pepper to taste.
Cover and refrigerate for at least 2 hours.
Serve chilled.
