Ingredients

12 oz olive oil

10 oz fresh lime juice

2 tsp cayenne pepper

1 tbsp minced garlic

5 lbs cooked black beans, well rinsed and drained

2 lbs tomatoes, peeled and chopped

2 lbs green pepper, seeded and chopped

10 oz celery, chopped

6 oz scallions, chopped

1/2 c fresh cilantro, well washed, dried and chopped

2-1/2 lbs frozen corn kernels, thawed and drained

2-1/2 lbs PULLED WHITE TURKEY

As needed lettuce leaves, washed, dried and chilled

As needed fresh cilantro sprigs, well washed and dried

As needed avocado wedges

Directions

Lime Dressing

Whisk olive oil, lime juice, cayenne and garlic together.

Assembly

Toss beans, all vegetables and turkey together in a large bowl.

Pour Lime Dressing over salad and toss well.

Cover and refrigerate until thoroughly chilled.

Serve 8-ounces chilled salad on lettuce leaves. Garnish with additional fresh cilantro and avocado wedges.
