1 20-lb case TURKEY BREAST, SKINLESS
1 qt dry white wine
2 c blended oil
1/4 c finely chopped garlic
4 oz fresh thyme, finely chopped
2 oz fresh rosemary, finely chopped
As needed salt and pepper
As needed extra-virgin olive oil
Slice turkey into 7-ounce portions & flatten to an even thickness.
In a mixing bowl, whisk together wine, blended oil, garlic, thyme and rosemary. Add salt and pepper to taste.
Marinate turkey slices in a covered container in the refrigerator for 12-36 hours.
Grill turkey breasts for about 6 minutes per side or until the internal temperature reaches 170 degrees F. Brush with extra-virgin olive oil.
