Smoked turkey breast is a filling, protein-packed topper for a simple salad. This no cook Turkey Raspberry Salad is quick to put together, making it great for the lunchbox or a dinner party. A little crunch, a little tart and a little sweet – yum!
1 oz butter lettuce
4 oz smoked turkey breast, skinless and diced (try mesquite or other flavors)
1 oz fresh raspberries
1 oz goat cheese, crumbled
1 oz sliced almonds, toasted
2 oz raspberry vinaigrette
Place lettuce on plate, preferably which has been chilled. Arrange turkey on top of greens.
Sprinkle raspberries, cheese and toasted almonds over turkey. Top with homemade or store bought raspberry vinaigrette.
Serve immediately.
