4 oz TURKEY CUTLET
As needed flour
1 oz clarified butter
1/3 c heavy cream
1/4 c Gorgonzola cheese
Pinch fresh cracked black pepper
2 oz English walnuts, toasted and rough chop
Place turkey cutlet between 2 pieces of plastic wrap. Carefully pound the turkey to an even thickness of ¼-inch, keeping in one piece.
Lightly dust pounded turkey with flour.
Sauté turkey in butter, turning to brown both sides.
Remove cutlet from pan and hold warm for service.
Add cream and cheese to the hot pan.
Simmer while stirring until cheese melts, and then add a pinch of fresh cracked black pepper.
Pour sauce over turkey and top with walnuts.
