10 lbs TURKEY BREAST, boneless and skinless
6 c liquid eggs
3/4 c mirin
3 tbsp Chinese five spice
10 c all-purpose flour
20 c panko
30 c cooked rice
30 c stir-fried vegetables
As needed tonkatsu sauce
Slice turkey breast into 1/3-pound slices.
Prepare egg wash by combining liquid eggs with mirin and five spice.
Dredge sliced turkey in flour and then egg wash. Drain excess and coat with panko.
Deep fry turkey until golden brown and cooked throughout.
Plate each serving with one turkey slice on a bed of 1 cup cooked rice and 1 cup stir-fried vegetables.
Serve with tonkatsu dipping sauce.
** NOTE: Turkey cutlets may be substituted for the boneless skinless turkey breast.
