3 Large limes, zested and juiced
1/3 c reduced-sodium soy sauce
1/3 c green onion, minced
3 tbsp cilantro, minced
1/3 c crunchy peanut butter
2 tbsp light brown sugar
1 tbsp fresh gingerroot, peeled and minced
1 tbsp fresh garlic, minced
3/4 tsp red pepper flakes
12 8-inch whole wheat tortillas (high protein)
3 lbs OVEN ROASTED TURKEY BREAST, sliced thin
6 oz red onion, sliced thin
6 oz lettuce, washed, drained, chilled and shredded
1/4 c cilantro, washed, drained and chilled
In a medium bowl, combine lime juice and zest, soy sauce, onions, cilantro, peanut butter, sugar, ginger root, garlic and pepper flakes. Stir well.
Spread each tortilla with Peanut Sauce.
Layer each with 4 ounces sliced turkey. Evenly sprinkle each with 1 tablespoon onion, 1 tablespoon lettuce and 1 teaspoon cilantro.
Roll up tightly and cut on the diagonal. Serve chilled.
