2 tbsp fresh homemade guacamole
1 10-inch whole wheat flour tortilla, warmed
3 Large eggs, scrambled
2 Strips applewood bacon, diced, cooked and well drained
3 oz HOUSE SMOKED TURKEY BREAST, thinly sliced
2 oz white Cheddar cheese, shredded
3 oz fresh potatoes, peeled and cut into 1/2-inch cubes
As needed canola oil
As needed kosher salt and freshly ground black pepper
Dash Old Bay seasoning
Spread guacamole inside tortilla. Add cooked eggs and bacon. Layer with turkey slices and Cheddar.
Roll up tightly and cut on the diagonal.
Parboil potatoes until just tender. Drain and reserve for service.
Heat oil in a small skillet and sauté potatoes until hot throughout. Season with salt, pepper and Old Bay seasoning.
Per order, plate hot sandwich and serve with hot Baltimore Brunch Potatoes.
