1/3 c maple syrup
1 tbsp margarine
1 lb TURKEY CUTLETS
2 (1/8-inch thick) Slices TURKEY HAM, each cut in half
1 oz Monterey Jack cheese, cut into 1/4-inchX2-inch strips
2 tsp Creole seasoning
1/4 c pecans, finely chopped
4 tbsp plain yogurt or light sour cream
In an 8-inch micro-safe dish, combine syrup and margarine. Cover and microwave on HIGH (100% power) for 20-30 seconds or until margarine is melted. Set aside.
On each cutlet, place a slice of ham. Arrange a cheese stick at one end of ham-topped cutlet. Roll cutlets up, jelly-roll style, to encase cheese. Place rolls, seam-side down, in a baking dish with syrup mixture. Sprinkle each roll with 1/2-teaspoon Creole seasoning.
Cover dish with wax paper and microwave on HIGH (100% power) for 2-1/2 minutes. Rotate dish 1/2 turn and baste rolls with sauce. Sprinkle pecans over top and recover. Microwave on HIGH (100% power) for 2-1/2 minutes.
Allow rolls to stand, covered, 1 to 2 minutes before serving. Top each roll with 1 tablespoon yogurt or light sour cream.
