2 6-inch flour tortillas
1 oz shredded Cheddar cheese
1 oz crumbled Feta cheese
3 Large eggs, beaten
As needed olive oil
1 oz yellow onion, diced
1 oz green bell pepper, diced
2 oz SMOKED TURKEY BREAST, chopped
1 oz tomato, seeded and diced
6 oz rosemary potatoes
2 oz mixed greens
Garnish fresh whole jalapeno
Top tortillas with Cheddar and Feta Cheeses and melt cheese in oven.
Scramble eggs in a non-stick skillet.
In a separate skillet, sauté yellow onion, green peppers, smoked turkey and tomatoes until vegetables are soft.
Add eggs to sauté skillet and mix well.
Fill tortillas with egg/turkey mixture.
Serve with Rosemary Potatoes, mixed greens and fresh jalapeno.
