4 lbs GROUND TURKEY
1 tbsp onion powder
1 tbsp garlic powder
2 tsp fennel seed, ground
2 tsp cayenne pepper
1/3 c roasted red pepper, puréed
1/4 c parsley, freshly chopped
1 tbsp kosher salt
12 sesame seed buns, split
12 Pieces crisp iceberg lettuce
3 vine ripe tomatoes, cut into 12 thin slices
1 Medium red onion, cut into 12 very thin slices
Turkey Burger
Gently combine ingredients. Shape into 12 round patties, approximately ¾ inch thick.
Cover and hold for service in refrigerator.
Service
Per order: Heat large skillet or griddle to medium-high heat. Cook burgers about 7 minutes per side until cooked though and internal temperature registers 165 degrees F.
Toast buns on the griddle, cut side down, just until lightly toasted, about 1 minute.
Build burgers with lettuce, tomatoes, onions, ketchup, mustard and mayo and cover with the top bun.
