8 Medium asparagus spears
4 tsp stone-ground mustard
1 tbsp fat-free mayonnaise
1 tbsp maple syrup
4 (8-Inch) whole wheat tortillas, warmed
1/2 lb sliced deli turkey
1/2 Medium ripe avocado, peeled and sliced
2 Strips TURKEY BACON, diced and cooked
1 c shredded lettuce
1/8 tsp freshly ground black pepper
In a large skillet, bring 3 cups cold water to boil. Add asparagus, cover and cook for 2-4 minutes. Drain and immediately place asparagus in ice water. Drain and pat dry.
Meanwhile, combine mustard, mayonnaise and syrup; spread over each tortilla.
Layer tortillas with turkey, avocado, bacon, lettuce and asparagus. Sprinkle with pepper. Roll up and secure with toothpicks.
