1 lb GROUND TURKEY, chilled
1/2 c peeled and grated tart apple
2 tbsp soft bread crumbs
1 tsp dried sage leaves
1 tsp dried rosemary, crushed
1/2 tsp fennel seeds, crushed
1/4 tsp smoky paprika
1/8 tsp red pepper flakes
Pinch ground mace
1 tsp kosher salt
1/2 tsp freshly ground coarse black pepper
As needed Nonstick cooking spray
Thoroughly mix first 11 ingredients together. Form into 8 small patties.
Cover and refrigerate for several hours to allow the flavors to permeate.
To cook: spray a skillet with nonstick cooking spray. Cook sausage patties over medium heat, turning once, until browned and the internal temperature reaches 165 degrees F.
