2 lbs Thai peanut sauce
25 (10-Inch) whole wheat tortillas
4 lbs PRE-COOKED CHUNKED TURKEY (WHITE & DARK MEAT) OR PRE-COOKED CHUNKED TURKEY BREAST
3 to 3-1/2 lbs Napa cabbage, shredded, OR salad mix
3 to 3-1/2 lbs carrots, peeled and shredded
3 Bunches green onions, sliced fine
1 lb crunchy chow mein noodles
Spread 1 to 1-1/4 ounces Thai peanut sauce on each tortilla.
Top with turkey, 2 ounces each of Napa cabbage and shredded carrots, 1/2 ounce green onion and 1/2 ounce chow mein noodles.
Roll up, tightly, in burrito fashion and cut in half, diagonally.
Wrap in plastic wrap with cut side showing.
Hold chilled for service.
