Ingredients

1/2 c Red bell peppers, small diced

¾ c Red onion, peeled and chopped

2 tbsp Garlic cloves, peeled and minced

3 tbsp Olive oil

5 lbs Ground turkey

2.5 lbs Italian style sausage, removed from casing

½ c Scallions, chopped

1 c Tomatoes, diced

2 tbsp Basil leaves, minced

1 tbsp Oregano leaves, minced

1 Egg

½ c Bread crumbs

To Taste Salt and pepper

Directions

Preheat oven to 350°F

In a large saucepan, quickly sauté the peppers, onions and garlic in olive oil, 2-3 minutes

Place the rest of ingredients in a glass mixing bowl

Add the cooked vegetables to the bowl and mix thoroughly

Season with salt and pepper

Cook a small half ounce patty of mix in sauté pan and taste

Adjust seasoning if needed before shaping meatballs all of it into 2oz round compact balls

Sear each ball in medium high sauté pan until each is lightly browned top and bottom

Place each one onto a wax paper lined sheet pan and cook in oven for 8-10min. Or until cook through

165°F internal temperature

Serve hot
