The perfect one-bite appetizer for any occasion mixing some of our favorite ingredients. Make extra though – these will go fast!
1 lb cremini mushrooms (about 30), stemmed
½ lb ground turkey
¼ c panko bread crumbs
¼ c plus 1 tbsp shredded Parmesan cheese, divided
¼ c pesto sauce
¼ tsp salt
Dash black pepper
Chopped fresh parsley (optional)
Preheat oven to 400°F. Spray 13x9-inch baking pan with nonstick cooking spray. Remove stems from mushrooms; place cap side down in prepared pan.
Combine turkey, panko, ¼ cup cheese, pesto salt and pepper in medium bowl. Mix gently but thoroughly. Shape meat mixture by teaspoonfuls into balls; press into mushrooms. Sprinkle remaining 1 tablespoon cheese over stuffed mushrooms.
Bake about 20 minutes or until filling is cooked through. Transfer mushrooms to serving plate; cool slightly. Garnish with parsley.
