8 6-oz TURKEY CHOPS, patted dry
1 Pint Kalbi style Asian marinade OR teriyaki marinade
1 c sesame seeds
1 tbsp fresh gingerroot, peeled and minced
2 tsp dry mustard
1 tsp cayenne pepper
Salt and pepper To taste
1/4 c cilantro, minced
3 Large eggs
2 tbsp water
2 tbsp canola oil
Asian dipping sauce As needed
Place turkey chops in a single layer in a non-metallic shallow dish. Cover with marinade and refrigerate. Turn every 30-60 minutes. Marinate at least 2 hours.
Combine sesame seeds, gingerroot, mustard, cayenne, salt, pepper and cilantro in a shallow dish.
Whip together eggs and water.
Brush both sides of turkey chops with egg wash and dip into sesame seed mixture, coating both sides.
Pour oil into large skillet. Heat over high heat and add chops, searing 1 minute per side.
Reduce heat to medium low, cover and cook for 4-5 minutes, turn gently to prevent scraping off the coating. Continue to cook until the internal temperature reaches 165 degrees F.
Serve with Asian Plum dipping sauce.
