4 oz sugar
1/2 tsp kosher salt
1 oz Chinese 5-Spice
1 oz cold water
1 lb TURKEY BREAST, boneless
1 Each mango, peeled and minced
2 oz red bell pepper, seeded and minced
2 oz yellow bell pepper, seeded and minced
2 oz sweet onions, minced
1 oz cilantro, chopped
1 oz freshly squeezed lime juice
Kosher salt and freshly ground black pepper To taste
25 Each won ton wrappers, cut in half diagonally and deep-fried
CHAR SIU TURKEY BREAST
Mix sugar, salt, 5-spice and water until a paste is formed. Liberally coat turkey breast with the mixture.
Smoke in a preheated 250 degree F smoker oven for 2 hours or until the internal temperature registers 165 degrees F.
Trim and mince turkey breast and reserve for service.
ASSEMBLY
Combine mango, peppers, onion, cilantro, lime juice, salt and pepper. Toss. Add smoked turkey and blend well.
Top each fried won ton with a spoon of salad mixture. Serve immediately.
