2 lbs fresh young (thin) asparagus spears
2 tbsp virgin olive oil
2 oz shaved Parmesan cheese
To Taste freshly ground black pepper
1/3 c good quality balsamic vinegar
Preheat oven to 450 degrees F. Place asparagus on a large shallow baking sheet. Drizzle with olive oil and toss to coat. Arrange asparagus spears in a single layer.
Spread Parmesan cheese over asparagus. Season with freshly ground black pepper.
Bake 12-15 minutes in the preheated oven, until cheese is melted and asparagus is tender but crisp. Serve immediately sprinkling with balsamic vinegar.
