3/4 lb COOKED HONEY-ROASTED TURKEY BREAST, cut into 1/4-inch cubes
1 Small red bell pepper, seeded & cut into 1/4-inch cubes
1 Small yellow bell pepper, seeded & cut into 1/4-inch cubes
1 (15-oz) can cooked black beans, well rinsed & well drained
1 c thinly sliced green onions
3/4 c chopped fresh cilantro
2 tbsp olive oil
1 tbsp red wine vinegar
1 tsp ground cumin
1/4 tsp cayenne pepper
In a large bowl, combine turkey, red and yellow peppers, black beans, onions and cilantro.
In a small bowl, whisk oil, vinegar, cumin and cayenne. Fold dressing into turkey mixture. Cover and refrigerate for, at least, 1 hour.
