3/4 lb HONEY-CURED TURKEY HAM, cut into 1/4-inch cubes
2 Cans (15 oz each) black-eyed peas, rinsed and drained
1/2 c thinly sliced green onion
2 tbsp chopped fresh chives
1 tbsp olive oil
1 tbsp tarragon vinegar
1/2 tsp pepper
1 Clove garlic, minced
In large bowl combine turkey ham, peas, onion and chives.
In small bowl whisk oil, vinegar, pepper and garlic to make vinaigrette. Fold vinaigrette into turkey mixture. Cover and refrigerate at least 2 hours.
