24 oz BONELESS TURKEY MEAT, 1/2-inch dice
3 oz buttermilk
3 oz Crystal hot sauce
2 tbsp brown sugar
1 oz lemon juice
1 c cornstarch
1 tsp salt
1 tbsp white pepper
1 tsp cayenne pepper
3 oz Crystal hot sauce
3 oz mayonnaise
3 oz bleu cheese, crumbled
1-1/2 c bow-tie pasta, (3 c cooked)
1/2 Each red onion, julienned
1 Stalk celery, finely julienned
1 tbsp parsley, finely julienned
Salt and pepper To Taste
Marinate turkey for about one hour or overnight in the buttermilk, hot sauce, brown sugar, and lemon juice. Marinate in the refrigerator.
Remove the turkey from the marinade -- drain well. Discard marinde.
Mix cornstarch, salt and peppers. Dredge turkey with seasoned cornstarch.
Working in batches, fry turkey in 350 degree F fryer until golden brown. Drain well.
Mix cooked pasta with the fried turkey, bleu cheese, mayonnaise, hot sauce, red onion, celery, and parsley.
Season to taste.
