1 lb GROUND TURKEY
1/4 c Italian parsley, chopped, divided
1/4 tsp ground pepper
Salt To Taste
1/4 c plain low-fat yogurt
4 Each hamburger rolls, split and lightly toasted, if desired
4 Each curly leaf lettuce, washed and chilled
4 Slices tomato
4 tbsp carrot, peeled and coarsly grated
4 tbsp alfalfa sprouts, washed and chilled
Prepare charcoal for gilling or preheat broiler.
Gently mix ground turkey with 2 tablespoons of the parsley and pepper in a mixing bowl. Gently shape into 4 patties, about 1-inch thick.
Grill or broil patties approximately 4 inches from the source of the heat, turning once, 14 to 15 minutes until done in center and internal temperature reaches 165 degrees F.
Meanwhile, combine yogurt and remaining 2 tablespoons of parsley in a small bowl, stirring until blended.
Place one lettuce leaf on each roll. Arrange turkey burger on top of lettuce; top each with a tomato slice, some carrot, alfalfa sprouts and yogurt. Serve at once.
