1 lb ground turkey
1 medium onion, diced
1 green bell pepper, diced
1 red bell pepper, diced
2 cloves garlic, minced
½ tsp black pepper
½ c low sodium turkey stock
1 tbsp Worcestershire sauce
1 tsp soy sauce
8 ounces Velveeta cheese block, cubed
1 c shredded sharp cheddar cheese
2 tbsp canola oil
King's Hawaiian Rolls
scallions, chopped into thin rounds
mini gherkins (cornichon) for garnish
MAKE THE SLOPPY JOE MIXTURE
Heat canola oil in a large skillet over medium-high heat. When hot, add the ground turkey, onion, garlic and bell peppers. Break up the ground turkey and cook, stirring occasionally, for roughly 10 minutes until it’s no longer pink. The onions will become translucent, and the bell peppers will soften.
Add black pepper, stock, Worcestershire sauce and soy sauce. Combine and simmer for a few minutes, stirring occasionally.
Reduce the heat to the lowest setting, add the cubed Velveeta and stir for 3 to 5 minutes until it melts into the mixture.
The sloppy joe mixture can be made up to a day in advance. If doing so, let cool and refrigerate. If serving immediately, remove from the heat and mix in the cheddar cheese.
When reheating the refrigerated mixture, do so slowly in a skillet over low heat stirring frequently. Add the cheddar cheese when the mixture is warm and you are ready to serve.
Season with salt and pepper to taste.
TO ASSEMBLE
Separate the rolls.
Carefully spoon sloppy joe mixture on each roll and sprinkle with scallions before placing the tops back on.
Place the mini gherkins on toothpicks and insert into each slider.
Serve immediately.
