7 oz unsalted butter
3 c fresh lemon juice
3 c fresh lime juice
1/4 c sugar
3 c TURKEY STOCK
1/4 c cornstarch
To Taste salt and white pepper
3 Each fresh pineapples, cubed
6 Each kiwi, peeled, halved and sliced
12 Each oranges, cut into segments
50 6 oz each TURKEY BREAST CUTLETS, gently flattened to an even thickness
7 Each limes
Heat butter in sauce pan. Blend in lemon and lime juices and sugar; bring to a boil.
Mix turkey stock with cornstarch. Add to sauce and thicken to make a glaze. Season to taste.
Gently mix pineapple, kiwi and oranges into a bowl. Cover; hold for service in the refrigerator.
Brush glaze on turkey cutlets. Bake in a preheated convection oven at 350 degrees F for 5 minutes. Remove, apply more glaze and bake an additional 3 minutes or until cooked through.
Slice limes into 8 slices each. Hold for garnish.
Serve 2 ounces of Citrus Salsa with turkey and garnish with 2 slices of lime.
