Bring the Gulf Coast right to your kitchen! This spicy turkey sausage gumbo recipe from West Liberty Foods’ Susie Kardel will satisfy any hankerin’ for Cajun flavor and keep the good times rolling right through dinnertime.
3 tbsp unsalted butter
6 c fresh corn kernels (about 8 ears)
1 c sweet onion, chopped (1 small onion)
4 oz cream cheese, softened
½ c half and half
2 tsp black pepper
1 ½ tsp salt, divided
2 tbsp fresh chives, chopped - plus more for garnish
1 tsp olive oil
8 oz turkey sausage links, cut into¼ in slices (the spicier the better!)
1 lb medium-sized, raw shrimp, peeled and deveined
1 tbsp fresh parsley, chopped
Melt butter in large skillet over medium high. Add corn and onion. Cook stirring occasionally until tender - 8 minutes. Stir in cream cheese, half and half, pepper and 1 tsp salt. Cook stirring until cream cheese melts, 2 minutes. Stir in chives. Remove from heat. Cover. Keep warm.
Heat oil in separate skillet. Add sausage, stirring occasionally for 6 minutes. Drain on a paper towel. Save pan drippings. Sprinkle remaining salt on shrimp. Add to pan, stirring occasionally and cook over medium heat until it turns pink, 3 minutes.
Combine corn and onion mixture with shrimp and sausage. Top with parsley.
