1 lb GROUND TURKEY
1 Clove garlic, chopped
1 c onion, chopped
1 Can (14-1/2 oz) tomatoes, chopped
1 Can (6 oz) tomato paste
2-1/2 tsp Italian seasoning or dried oregano leaves
8 uncooked lasagna noodles
1 Container (12 oz) low-fat cottage cheese
8 oz (2 c) shredded part-skim Mozzarella cheese, DIVIDED
In 2-quart microwave-safe casserole dish, combine turkey, garlic and onion; cover with plastic wrap. Microwave at HIGH (100% power) 5 minutes, stirring halfway through cooking time. Add tomatoes, tomato paste and Italian seasoning. Microwave, uncovered, at HIGH (100% power) 5 minutes.
Spoon 1/3 of the tomato sauce (about 1-1/3 cups) over bottom of oblong 2-quart casserole dish. Top with 4 lasagna noodles, breaking noodles to fit. Spoon cottage cheese over noodles; sprinkle half of Mozzarella over top of cottage cheese. Spoon 1/3 more sauce over cheese; top with remaining noodles. Spoon remaining sauce over noodles. Cover with vented plastic wrap.
Microwave at HIGH (100% power) for 5 minutes. Reset microwave at MEDIUM (50% power) for 20 to 25 minutes or until noodles are tender. Remove from microwave oven.
Sprinkle remaining Mozzarella cheese on top. Cover or tent and let stand 10 minutes for cheese to melt.
NOTE: To absorb any spillovers in microwave, set lasagna dish on several layers of paper toweling.
