Ingredients

16-oz plain, low-fat yogurt

2 tbsp vegetable oil

3 cloves garlic, minced

3 tbsp curry powder

2 tsp ground cinnamon

To taste salt and pepper

1 lb turkey tenderloins

2 c uncooked basmati rice

2 small white onions, peeled and cut into quarters

1 tbsp vegetable or olive oil, for brushing onions

Directions

Turkey Marinade

Whisk together yogurt, oil, garlic, curry powder and cinnamon in a medium bowl. Pour marinade into a quart-size zipper bag.

Season turkey with salt and pepper. Add to the zipper bag, seal and shake. Marinate in the bag, refrigerated, for 30 minutes to 2 hours. You may want to put the bag on a plate or other dish in case it leaks.


Grilling Turkey & Onions

Preheat grill.

Remove turkey tenderloins from zippered bag and place on grill rack. Brush with more marinade.

Place onion wedges on grill rack and brush with oil.

Grill turkey and onions for 5 minutes, then turn and baste turkey with more marinade. Discard remaining marinade.

Grill turkey and onions 5-7 more minutes until a meat thermometer inserted in the center of the turkey reaches 165°F and onions are soft.

Divide turkey, onions and cooked basmati rice between four plates for service.


Note: While preheating grill, prepare basmati rice according to package directions.
