1/2 lb HOT ITALIAN TURKEY SAUSAGE, casings removed
1 Small onion, chopped
1 (14-oz) jar spaghetti sauce
2 c uncooked whole wheat egg noodles
1 c cold water
1/2 c chopped zucchini
1/2 c fat-free Ricotta cheese
2 tbsp grated Parmesan cheese
1 tbsp minced fresh parsley OR 1 tsp dried parsley flakes
1/2 c shredded part-skim Mozzarella cheese
In a large nonstick skillet, over medium heat, cook sausage, breaking up the sausage with the back of a wooden spoon. Cook sausage and onion until sausage is no longer pink and onions are soft.
Stir in the spaghetti sauce, egg noodles, water and zucchini. Bring to a boil. Immediately reduce heat to low. Cover and simmer for 8 to 10 minutes or until pasta is tender, stirring occasionally.
Meanwhile, in a medium bowl, combine the ricotta, Parmesan and parsley. Drop by tablespoonfuls over the pasta mixture. Sprinkle with Mozzarella cheese. Cover and cook only 3 to 5 additional minutes longer or until cheese melts.
