2 oz canola oil, for carmelizing
5 lbs onions (sweet), carmelized
5 large green peppers, roasted and peeled
5 poblano chiles, roasted and peeled
5 large jalapeno peppers, roasted and peeled
5 garlic bulbs, roasted and peeled
Salt to taste
Caramelize onions in canola oil.
Roast peppers, chiles and garlic and prepare as indicated above.
Purée all ingredients in food processor until very smooth.
Season to taste.
Hold tightly covered in refrigerator for a maximum of 10 days.
To be used with Mexican Pizza and Tex/Mex Roll-up.
