Olive oil As needed
6 oz TURKEY MEDALLIONS
1 (14 to 16-oz) baked herbed cheese pizza crust
2/3 c pizza sauce, warmed
1 c shredded Provolone cheese
2 tbsp fire roasted mild chili pepper, cut in strips
Heat oil in a sauté pan. Sauté medallions over medium-high heat for 2 minutes, turn and cook for an additional 2-3 minutes or until cooked through to an internal temperature of 165 degrees F.
Remove from heat and cut into 2-inch chunks.
Brush both sides of pizza crust with olive oil. Place pizza crust, top-side down on grill rack. Grill over indirect low heat for 2 to 3 minutes until crust is warm.
Remove from heat and place on large tray.
Quickly spread pizza sauce on the cooked side of the pizza crust, then arrange cooked turkey evenly across top of pizza. Sprinkle with cheese and chilies.
Return pizza to grill rack and grill over indirect low heat. Cover with grill lid or tent with foil.
Grill for 8 to 10 minutes or until toppings are warm and cheese has melted.
