2 lbs russet potatoes, peeled and sliced VERY thin
To taste salt and black pepper
1 lb TURKEY SAUSAGE, cooked and crumbled
2/3 c roasted red pepper, julienne slice
6 Large eggs
2 c whole milk
1/3 c chopped fresh chives or green onion tops
As needed salsa
Spray a half size (10x12x2-inches) pan with non-stick spray. Arrange ½ of the sliced potatoes in prepared pan. Sprinkle with salt and pepper.
Cover with half the turkey sausage. Place the remaining potatoes atop the sausage, sprinkle with salt and pepper.
Top with remaining sausage. Evenly distribute sliced red peppers over sausage.
Beat eggs, milk and chives/onions until blended. Slowly pour over sausage/potato layers.
Cover pan with heavy foil. Bake in a preheated 375-degree F oven for 40-50 minutes or until potatoes are tender.
Uncover and bake 5 to 10 more minutes to ensure golden top.
Serve with salsa as a garnish.
