1/2 c low-sodium soy sauce
1/4 c dry sherry
3 Large eggs, beaten
1/4 c cornstarch
1/4 c vegetable oil
6 lbs BONELESS TURKEY THIGHS, skinned
3/4 c low-sodium soy sauce
3 tbsp sugar
3 tbsp sesame oil
1-1/2 tbsp distilled white vinegar
1 tbsp cornstarch mixed with 1 tbsp cold water.
Oil for deep frying As needed
1/4 c oil
1 lb broccoli stems, cut into 1-1/2-inch pieces
1/4 c chiles, thinly sliced
12 Cloves garlic, chopped
2 oz fresh ginger, peeled and thinly sliced into 1/4-inch squares
1 c scallions, bias slice
1/4 tsp salt
MARINADE
Combine first five ingredients.
Cut turkey into 2-inch x 1/4-inch wide strips. Add to marinade. Cover and refrigerate for 2 to 4 hours.
SEASONING SAUCE
Combine soy sauce, sugar, sesame oil, vinegar and cornstarch + cold water and reserve.
FRYING
Preheat deep fryer oil to 365 degrees F. Drain and discard turkey marinade.
Quickly fry turkey cubes until browned and lightly crusty, keeping pieces separate.
Drain and reserve.
STIR-FRY
Heat 1/4-cup oil in a work. Stir fry broccoli, chiles, garlic, ginger, scallions and salt.
Stir-fry until fragrant. Add reserved seasoning sauce. Bring to a boil, stirring until sauce thickens.
Return reserved turkey and stir fry to heat though. Combine all ingredients.
