1 tbsp canola oil
1/2 c chopped sweet onion
1/2 c chopped celery
2 Cloves garlic, minced
1 14.5-oz can diced tomatoes, with juices
1/2 c chili sauce
1/2 tsp dried thyme
1/4 tsp cayenne pepper
1 lb TURKEY CUTLETS, cut into 1-inch cubes
1/2 tsp garlic-pepper blend
8 oz TURKEY KIELBASA SAUSAGE, cut into 12 slices
1 Large red bell pepper, seeded and cut into 18 pieces
Cajun Sauce
1. Over medium-high heat, heat oil in medium skillet until hot. Add onion and celery and cook for about 2 minutes. Stir in garlic and sauté until garlic is fragrant.
2. Stir in tomatoes, chili sauce, thyme and cayenne pepper, mixing well. Reduce heat and simmer mixture over low heat for about 5 to 7 minutes, stirring occasionally. Hold warm until service.
Turkey Kebabs
1. Sprinkle turkey cutlet cubes with garlic-pepper blend. Thread each skewer by alternating turkey cubes, turkey kielbasa slices and red bell pepper onto skewers. (If using wooden skewers, soak them in cold water for at least 30 minutes.)
2. Grill kebabs, on grill rack, over medium direct heat, about 5 inches from the heat source. Grill for 10 to 12 minutes, turning a quarter of a turn every 2 to 3 minutes, or until turkey is no longer pink in the center.
3. Serve kebabs with Cajun sauce.
